Smoking Courses

The Wild Boar is working with smoking experts Smoky Jo’s to provide one day courses, where guests will learn how to hot and cold smoke their own food.

Those taking part in the courses will get the chance to smoke a range of different foods such as chicken, salmon, sausages and cheeses. As well as using the Inns own purpose built smokehouse the Smoky Jo’s team will show how tremendous results can be achieved at home – on a stove, converted bbq, wardrobe or filing cabinet!

2015 Course Dates & Prices

The courses will be at a set cost of £119.00 plus accommodation starting from £156 per person for 2 nights and run on the following dates:

  • Saturday 7th November 2015
  • Wednesday 9th December 2015 (Christmas theme)

2016 Course Dates and Prices

The courses will be at a set cost of £139.00 which also includes lunch and dinner. Add accommodation at a reduced rate too! For 2016 the course will run on the following dates:

  • Saturday 6th February 2016
  • Wednesday 11th May 2016
  • Wednesday 15th June 2016
  • Wednesday 14th September 2016
  • Saturday 19 November 2016
  • Wednesday 7th December 2016 (Christmas Theme)

Arrival at 10.00am and finish time is approx. 3.30pm.

Smoky Jo and Smoky Georgina!

Smoking food is an art, not a science, and no one knows that better than Georgina Perkins and Jo Hampson. A few years ago they were running The Old Smokehouse, a small artisan smokehouse renowned for its high quality, hand smoked food; supplying such gourmet outlets as Fortnum and Mason, Selfridges and Harvey Nichols as well as the best food emporiums across the Lake District. They even had the honour of smoking turkey for the Prince of Wales!

After selling the business in 2004 they missed the ready supply of smoked morsels. One day Jo was clearing out old paperwork in her filing cabinet; some of the papers were confidential and required shredding but with no shredder she thought she would just put a match to the whole lot!

In a moment of madness the thought came to her – "What if I light a fire in the bottom drawer and put a salmon in the top drawer…?"

The success of Freddie the Filing Cabinet Food Smoker was such that Jo and Georgina found many food connoisseurs keen to learn the art of smoking… and Smoky Jo’s was born in 2007.

On the one day food smoking courses guests learn how to hot and cold smoke their own food at home. Working with over a dozen different foods and a number of different smokers – anything from a saucepan on the stove top to Freddie the filing cabinet in the garden – provides plenty of samples to enjoy at the end of the day!

Unique to the Lake District

As the only restaurant in the Lake District with its own smokehouse The Wild Boar offers food lovers the opportunity to learn some new techniques that they can practice in their own home without the need for any professional equipment.
