Wedding Menus & Drinks Packages

When creating your Wedding Breakfast menu, we respectfully request that you select one choice per course for the entire wedding party along with one vegetarian alternative from either the Seahorse or Odysseus menus. However, from a traditional Afternoon Tea, to a 10 course tasting menu, we would love to hear your ideas on a bespoke menu to make your wedding even more individual. We are, of course, also more than happy to accommodate any additional special dietary requirements you or your guests may have.

Seahorse

Wedding Breakfast Package Menu £35.00 per person.

To Start

  • Melon 3 ways - balls, ribbons and granita
  • Pressed Goosnargh chicken terrine - spiced fruit chutney, warm honey and granary cob
  • Port of Lancaster smoked trout - beetroot and celeriac remoulade, lambs lettuce
  • Carrot soup - spring onion and orange dressing (v)
  • Roast Mediterranean vegetable and mozzarella cheese tian - balsamic dressing (v)

To Follow

  • Slow cooked pork collar, Boulangere potatoes, caramelised apple, beetroot and fenugreek sauce
  • Roast Scottish salmon fillet, crushed lemon and mint potatoes, leek rondelles, vibrant herb sauce
  • Braised shoulder of Cumbrian lamb, dauphinoise potatoes, roast shallots, rosemary jus
  • Goosnargh chicken breast stuffed with chorizo, Boulangere potatoes, roast celeriac, Chantenay carrots, smoked paprika sauce
  • Seasonal vegetable fleuron, poached egg, truffle and chive cream (v)
  • Quinoa with roasted butternut squash, confit garlic, spinach and sage beurre noisette (v)

To Finish

  • Bailey’s crème Brûlée, homemade shortbread
  • Sticky toffee pudding with butterscotch sauce and Lewis’ of Morecambe vanilla ice cream
  • Lemon and honey cheesecake, red wine syrup, honeycomb

Sorbet

If you wish to add a sorbet course, this will be an additional £3.00 per person. Choose from the following flavours:

Odysseus

Wedding Breakfast Package Menu £45.00 per person.

To Start

  • Home smoked chicken, pickled carrot and pistachio salad
  • Port of Lancaster smoked salmon, crab and dill mayonnaise, celery and grape salad, grape vinaigrette
  • Frank Benson’s Morecambe Bay shrimps with blade mace butter, chargrilled sourdough, baby leaf salad
  • Duck and pork terrine, beetroot and apple relish, toasted local artisan rye bread, curly endive salad
  • Five Mile Town goat’s cheese and leek pressing, potato and truffle vinaigrette (v)
  • Apple and fennel soup, olive crostini (v)

To Follow

  • Fillet of beef with slow braised blade of beef potato cake, roast root vegetables and red wine sauce
  • Guinea fowl breast, ballontine of leg, fondant potato, shitake mushrooms, carrot and ginger emulsion
  • Roast cod, braised baby gem lettuce, Boulangere potatoes, leeks, lemon butter sauce
  • Herb crusted loin of Cumbrian lamb, pickled red cabbage, dauphinoise potatoes, shallot puree, mint jus
  • Baked onion tart, mustard dressing, minted potatoes, market vegetables (v)

  • Homemade garlic ciabatta bread, topped with melted Lancashire cheese

  • Cumberland sausages, roasted onions, mashed potato and gravy
  • Homemade haddock goujons, served with chunky chips, mushy peas and tartare sauce
  • Roasted chicken breast with new potatoes and seasonal vegetables
  • Macaroni cheese with tomato sauce

To Finish

  • Lewis’ of Morecambe vanilla ice cream with chocolate sauce
  • Warm rice pudding with strawberry jam
  • Fresh fruit salad

Choose one main course and one dessert plus a vegetarian option if required.
