Waterhead Chef Inspired by Tastes of Home

We love it when our Chefs take a few moments off from slaving over a hot stove and tell us a little about themselves and their favourite recipes. Here's Ilias from Waterhead...  

When did you first know that you wanted to pursue a career in catering?

I was 13 years old and it was an influence from my Grandfather back home in Greece that made me passionate about a career in hospitality and in-particular working in the kitchen.

What was the last meal you cooked for your family?

It was a family favourite Moussaka, I made it for my mother when I was on holiday back home recently. It was for her birthday and she loved it! 

Who has inspired you in your career?

Mostly my Grandfather as he had his own restaurant. He was a Chef and I used to go and help him from an early age. That’s where I fell in love with food. I have also worked for some great people and they in turn have all helped my career in some way.

Tell us about Baklava  

Baklava is originally from Greece or Turkey depending where you are from (they still argue today about it). I say Greece, but then I am from Greece myself! The dessert is made from layers of filo pastry each drizzled with butter and filled with almonds, walnuts, pistachio nuts and baked in the oven for about 30 – 40 minutes. I prefer to serve it with Greek yogurt ice cream which is how it is served in the Waterhead Bar and Grill as part of the new dessert menu. I am really pleased Adam, our Head Chef, decided to include. Another option would be to use a very nice smooth Vanilla ice cream and cinnamon. It’s a wonderful winter dessert and always reminds me of being back home.
