English Lakes has some amazing young Chefs who are not afraid to get creative in the kitchen. We caught up with Ben, Pastry Chef at Waterhead and asked him about who inspired him and what are his favourite dishes. We love his inspirational Gin and Tonic Cheesecake.
When did you first know that you wanted to pursue a career in catering?

I attended college when I was 15 as part of my GCSE’s. After a year at the catering college in Kendal I knew I wanted to pursue a career in catering, and in-particular in the kitchen.
What was the last meal you cooked for your family?
Bacon, mushroom spaghetti carbonara and it was for my mum who loves me cooking at home.
Who has inspired you in your career?
My college tutor Yannick is someone I look up to a lot. He has made me want to pursue a career as a pastry chef. This is the part of the kitchen I really enjoy. Looking further ahead though, I want to get more involved with the overall kitchen operation, which is something Head Chef Adam Graham has supported at Waterhead.

What is your signature dish?
Having a passion for the pastry section of the kitchen and having something of a sweet tooth it has to be a dessert! At the moment it is Chocolate Delice, Blood Orange Gel, Chocolate Soil and Chocolate Ice Cream.
Favourite dish from the Waterhead Menu?
Again, it's a dessert and it is one that combines Waterhead's vast collection of gins from all over the world. I wanted to use the inspiration from what we serve in the bar and see how I could combine that in the kitchen and onto the new menu. Our guests at Waterhead love a good G&T after spending a day out on the fells! So my favourite dish from the new menu is Hendricks Gin and Fever-Tree Tonic Cheesecake served with a cucumber sorbet.
